broccoli & cheese soup

Does anyone have a really good recipe for homemade broccoli and cheese soup?

Awesome! I was actually just looking at that recipe but I prefer to try things that other people have had before and say it's good. Yay   That's what we'll be having tomorrow!

I did double the broccoli though and wish I had tripled it.

I make mine real easy.

I saute diced onion in butter (about 6T.), for a few minutes. Toss in a few cloves of chopped garlic and saute a minute more. Then I dust in flour to the pot (you're kind of making a roux here, with the onions already there - so add a little less than the amount of fat you used).
Cook out the flour for 1 minute then whisk in about 3 cups of 1/2 and 1/2 and 3 cups of stock. Bring this to a simmer for about 10 minute.
Then add in about 4 cups of chopped broccoli and 1 cup of chopped carrots (you can omit, I like to use another veggie). Simmer all this til veggies are tender. About 20 minutes.

I take the pot off the heat then and puree the whole thing with my immersion blender, til I get the consistency I want. From there, I return to stove over low heat and add in about 3 cups of cheddar. Stir til melted. Season with S&P as you like (I like white pepper), even a dash of nutmeg.

That sounds really good. I like to have my veggies whole though, so do you think it would still taste alright if I didn't blend everything together?

that'd be more of a stew depending on how much you chopped them but, it wouldn't taste too bad I wouldn't think. You could always just puree 1/2 the batch and add it back to the pot with the chunkier veggies.
