Vegetarians

I have decided to become a vegetarian after the new year starts. I hardly ever eat meat anyway because I don't like how most of it tastes/makes me feel. I also got really into fitness and healthy living after I had my baby this year, and I think this would be a good thing for me. I also love animals (and just applied to go to school to be a vet assistant) and don't like the idea that I'm eating them. I don't (and won't) judge people who do - my fiance eats mostly meat - but this is what I think is right for me.

If there are any others, how long have you been a vegetarian? What made you decide to become one? And what are your favorite vegetarian dishes?

I was a vegetarian for a year. I love animals too, but my body needs some meat once in awhile.

I love pad Thai, or salad wraps.

I'm a vegan. I have been one for two years and a vegatrain for five. I chose this lifestyle because I think its absoulty disgusting what is in the food we eat. I do not eat anything processed only real foods.

I've been a strict vegetarian for 3 1/2 years, before that I was a vegan off and on.

It was hard being a vegan when I was married to my ex. He ridiculed me and didn't make it easy. My husband now, is a vegetarian too, so we don't even think about it really, it's our life. Having a good support system really helps.

What made me go vegan in the first place was a multitude of reasons, but I recommend reading Skinny Bitch. If that doesn't turn you, I don't know what will.

We eat a lot of legumes, different beans, tofu, some meat substitutes though we avoid them as much as possible.

One of my favorite things too cook is a baked enchilada casserole. Even our omnivore friends love it.


I suggest getting a good veggie friendly cookbook.

Ummm you should send me the recipe for that casserole, it sounds awesome and I've never made it before!!

Wow   Such commitment, ladies. It's impressive. Especially with how much overly processed/crappy foods there are out there! They're freaking everywhere. I don't really eat things like chips/cookies/sweets/junk food. If I do, it's only a little and rarely. It generally makes me feel sick. And since my fiance is anti-healthy anything, it's been hard for me to have a strict vegetarian diet. I've wanted to do this for a long time, but haven't been able to.

My fiance, son, and I have lived with my fiance's parents since we lost our apartment this past summer. They're currently paying for our food, and they're all big meat eaters. They buy veggies/fruit too, but not enough for me to eat only that. And when I used some of my money from my seasonal job at a department store, they got mad and said I was "wasting my money," even though I thought I was being helpful. I didn't want to ask them to pay for extra food because of a choice that I'm making.

I don't know. I'm going to commit myself to it on the 1st of January though. I've been very good at completing goals in the past year, so I know I can do it. Just not sure how to make it not awkward where I'm living.

As far as being vegan goes, I don't think I could do it. I have massive respect for people who have done it/are doing it, but I know I couldn't. I have a weakness for lowfat/fat free yogurt, and I'd like to not give that up. I started buying vegan cheese though, and almond milk (which I've fallen in love with.)

I'll definitely look into getting a veggie cookbook.
