Baking Question

I just realized Im out of vegetable oil and I dont have enough butter. The recipe calls for 3/4 cup vegetable oil, can I just use olive oil?
Im making persimmon bread.

I always use olive oil or sun flower oil. Veggie oil is awful.

Cool I never use it thats why when I looked at the bottle i realized it was like all gone and super old ha, SO uses it for frying sometimes.
We usually use butter from Stratus, have you heard of them?? Or I like Earth Balance too

Those links above wouldn't open for me so idk what they said but I always use the same Amt of olive oil as the recipe calls for to substitute and it turns out fine. Usually I use sunflower oil more for stove top cooking and olive oil for baking since subfloor oil is a little more rich and idk if it would be too flavorful in baking. I haven't had the nerve to try yet haha.

I haven't found a good butter yet that I like that's on the healthy side.   we bought some smart balance crap and were tryi to use it up so we can try something else cause its hard as a rock to spread   I like the I can't believe it's not butter olive oil one but there's healthier ones out there. But it spreads so nice haha

Do you have a wholefoods near you? Im not sure if Stratus is a cali thing i know it started in a small farm near the Bay Area, but now I think they have expanded. Anyway, there milk comes in glass bottles they have the best yogurt and butter and they treat there cows amazing. We cook with coconut oil too, Ive used that when baking gluteen free but for some reason I've never done olive oil I hope my bread turn out good
