I will likely cook something with chicken......
any suggestions?
Needs to be low calorie though, and I'm looking for something easy because I'm lazier then most days today..  haha

I will likely have to use the stove or oven. I don't grill. lol my spouse does that.
I was thinking some kind of recipe where I can throw everything together..
I often will make a quinoa broccoli casserole but I think I need to try something else.

Brown chicken on both sides, add 1 can of canned tomatoes and one packet of taco seasoning....or you could use a can of enchilada sauce, if you have it. Cover the pan, turn heat to low (very low) and cook for a good hour/hour and a half. you could add corn to the chicken, as well.

Make some white rice and top it with the chicken and sauce. Tender, juicy, low cal and delicious!

Cool thanks!! the only smurffy thing about finding a recepe is the fact that you almost ALWAYS have to go to the grocery store. Which sucks for me because I like to have dinner made when my boyfriend get's home and he has my car !

Bake your chicken, chunk it up and throw it on a salad. I do mine on the George foreman, but if you don't have one baking is sufficient.

Throw some fresh veggies, boiled eggs, cheese and croutons/tortilla strips on there. Yummy.

I usually get chicken breasts or leg quarters, cut up some yellow yukon potatoes, put that all in a foil lined pan in the oven (at about 400degrees).
For seasonings, I just kind of eye it & put some garlic salt, pepper, lemon juice, & whatever else I've got in my pantry. Keep it in for about 45min-1hr (or until potatoes are thoroughly cooked) & it's ready!
If I'm feeling super hungry, I'll make a side of white rice or long grain &wild rice Rice-a-Roni boxes.
It's kind of like a "put it in the oven & forget it while you do other things" kind of recipe. My SO LOVES it.

If you add the taco seasoning, add the required amount of water, or it will end up too salty. If you use 1/2 of the seasoning in the packet (depending on the denseness of flavor that you are going for), add half the water.

It's really good and super easy. I have it like once a week.
