snack and dinner ideas

anyone have some good snack ideas? my lo is 13 months old and im always struggling on what i can give him for snacks... if you have any meal ideas ill take those too.. my husband made a comment to me about how we are always feeding him frozen fish sticks and chicken nuggets, (i work evenings so i rarely cook dinner , only on my days off.) so if you have any simple quick dinner recipes ill take those too!!

Ham and cheese quesadilla, homemade pizza (toasted whole grain bread spread with marinara topped with cheese melted, add some blended carrots to the marinara he will never know), eggs... Snacks? String chees, raisins, berries, bananas, crackers with cheese, rolled up deli meat with Philadelphia.

i give my kids homemade peanutbutter crackers.
or cheese and fruit.
or cereal if they are lucky
one of my go to meals is this..
roasting dish..
line 3 cans of green beans,
diced potatoes ( i buy fingerling or purple potatoes and cut into peices, )
and 4 or 5 chicken breasts uncooked.
sprinkle the whole things with packet of italian seasoning dressing, the powder stuff, and drizzle with a stick of melted butter, cover with foil and bake for an hour, its super easy clean up, one dish, and its suprisingly delcious.
if you dont have a crockpt get one and make your life easy

and i have a crockpot, any one have some ideas that i can use with that? that way i can just throw everything in and my husband can just take out what he and LO needs?

I often make my daughter meals made up of different quick things!
Like for lunch today I made scrambled eggs, multigrain crackers, avocado chunks and some cheese. I would do something like that for dinner as well! Just a mix of different, nutritious food. I shoot for a protein (egg, tuna salad, meat etc), a grain (bread, toast, crackers), veggies (mixed frozen, avocado chunks), and dairy (cheese, yogurt, cottage cheese, milk).
We have plates that are divided into sections and they work great for this kind of meal.
