Christmas Baking...

.... what are some of your Christmas baking must haves?? Every year I've tried to make a habit of adding something new to my assortment so I'm always looking for ideas! This year all we've got done so far are sugar cookies, choco chip cookies, peanut butter cookies and the filling for our peppermint chocolate truffles on my next day off comes oreo truffles <3

First off, I don't make many myself, but i help my mom prepare her christmas cookie collection.
But our must haves:

Chocolate shortbread
Great-grandma's scottish shortbread
Buttertarts
Pecan tarts
Gingersnaps
Pfferneuse
Naniamo bars
Sugar Cookies
Lemon Squares
Pecan Crescent meltaways
Some type of brownie or square (changes year to year)
Mexican chocolate cookie
there are a few more, but my mind is drawing a blank.

Oooo they are my favorite, the are small, round, gingersnapish but soft and rolled in icing sugar after they are baked.

*Pfeffernusse, I can never spell it right I believe they are german....

I have 2 different lists of treats.....ones that I send as gifts in the mail (so no super soft or needs refrigerations one for that) but I usually do thumbprint cookies with different fillings, chocolate bark with peppermint and another batch with varied dried fruit.

Oh yes!
We do a chocolate caramel thumb print too. Rolled in like crushed almonds or something. So yummy, but annoying to make lol.
And "almond roca" cookies.
