I NEED A RED SAUCE!!!

posted 13th Dec
I need a tomato sauce, the kinds that are made amazingly by little old italian women...I love italian food and I love tomato sauce and I can only get good tasting sauce from a place that I just can't afford to eat at everyday(and I really do plan on eating italian food everyday if I could)...

anyone with a mindblowing recipe?...no "go buy prego"...I hate the jarred crap.

I like to puree tomatoes and thicken it with tomato paste since I can't seem to get it quick as thick as I like it with just fresh tomatoes. I usually just eyeball it......add in oregano, basil, salt, pepper....fresh if I have it, chop up garlic, onions, mushrooms....until it looks tasty. It isn't really a recipe, lol. I just eyeball it, it's always a little different, but it's always really good.

I do a big can of crushed tomatoes, small can of tomato paste, diced onions, garlic, a little bit of sugar, salt, oregano , basil and some olive oil
Cook the basil, onions and garlic in a bit of olive oil til onions are clear, then add the tomatoes and tomato sauce, seasonings and more olive oil. I let that simmer at least 30 mins, the longer it simmers the better it tastes.

I don't use a "homemade" recipe, but you can make some with the seasoning packet. It's amazing. So much better than jarred/canned. And add some stewed tomatoes, onions and peppers that you've sauteed with olive oil/garlic and you're good.

Oh, we use that sauce packet thing, too and like 3 cans of regular sauce, 2 cans of paste and onions, garlic, mushrooms and such - it is really good.
