I made salsa chicken in the crockpot for chicken nachos yesterday. I had a little but DH said he wasnt hungry and didn't eat. I'm really tempted to just serve them.tonight instead so it gets eaten? What would you do? I don't want to waste the meat. It's shredded chicken. Would it freeze okay? How would I cook it if I did freeze it?

you could always turn it into chicken tacos tonight or freeze it and do tacos some other time

It should be fine, I would serve it for dinner again tonight.

I plan on making shrimp tacos later in the week so I don't want chicken tacos too. How would I cook.the frozen meat later?

I'd do leftovers. I'm always looking for a way out of cooking at night   I hate being expected to make dinner after working my butt off all day.

I love cooking and I'm a SAHM so I have a lot of time for it. I just hate wasted food.

you could just thaw it out and either reheat in a pan or even microwave. You could also do quesadillas (sp) with it. It sounds really good and like something everyone here would love, did you just cook the chicken in a crockpot with the salsa?

I enjoy cooking too, just not the second I get home. Half the time I don't even get to change out of my scrubs until 9pm after everyone has been taken care of.
I wouldn't waste the food either, that's why leftovers would be perfect.

Yes I just put three boneless skinless chicken breasts in the crockpot with a small.jar of salsa and probably a half cup of water and cooked on high for four hours. Then I shredded it. To make the nachos I put refried beans, shredded chicken, olives and onions over chips with shredded cheese then baked it on 350°F for 10-15 mins. Serve.with shredded lettuce and plain Greek yoghurt.
