baby's last name

the nurses at the hospital told me that my baby can have the father's last name even if he isn't there after the birth, but in order for my s/o to be on the birth certificate he has to be there to sign it... problem is he might not be able to because he's in the military.
what's the process of getting my s/o's name on our baby's birth certificate once we leave the hospital? ps: i'm in canada, not the states.
