Meal ideas?

What are some simple meals for a 2 1/2 year old? He is getting either burned out on what feed him or wanting something new.

Breakfast...
Waffles or pancakes and fruit
Oatmeal
Yogurt and fruit
Dry cereal with milk
Pop tarts
Eggs, bacon, toast, sausage
Lunch...
Fish sticks and veggies
Sandwich
Frozen nuggets and fries

I make homemade chicken fingers. With breadcrumbs and parmasean cheese mixture with pepper and other spices. (I make them for my 10 month old tho) lol she loves them.
Beef stews and turkey spaghetti and I also do veggie stirfrys or chicken and beef stirfrys etc.....
ETA: I also do avocado mixed with banana or yogurt, tofu mixed with yogurt or fruits.
My lo loves homemade oatmeal with apples and cinnamon in it. at breakfast.scrambled eggs with cooked ham and cheese in it, someti8mes I add green peppers and onions.

I'll just list off a few meals that my son has been favoring lately..
Calzones - Canned pizza crust, sauce, cheese, whatever filling (pepperoni, typically) Bake with the times on the can for the crust
Egg cups (six eggs, 1/2c. cheese, 1-1.5 c. filling. Bake in muffin tins with liners, 350 20-30 min until firm on top) ..Makes an entire meal - but my son and DH love it
Pasta with a marina sauce or alfredo sauce and a fruit (lately, it's been bananas..)
Other times, we'll just do pancakes and fruit or something like a homemade lunchable... grilled cheeses.. I'll make up a homemade mac n cheese...

My son loves quesadillas (I put everything in these from simple meat and cheese, to spinach, or even pureed squash). He also loves scrambled eggs with spinach, ham, and cheese. Another huge hit, which I found on pintrest, is corndog muffins. I chop up hotdogs, add them to corn muffin mix, and usually add a bit of mustard and cheese too. Make it as muffins following the directions on the box. My son absolutely loves these, and I have to say they are pretty darn good.
