Golden Hominy??

posted 2nd Dec
Week of Thanksgiving I asked DH to restock out canned corn. Corn is one of the few veggies we eat canned. He came back from the store with a flat of about 24 cans of hominy. What the hell? I pride myself in my knowledge of unusual foods and my skill with introducing new and healthy foods into our meals...

I can't blame him, much. Looks just like corn. But how can you not read the label? It's right there! Hominy is so bland, boring and lifeless. Texture isn't my favorite either. I can see it going decently in cornbread, or a hush puppy...
But what is the best use for it?
Anyone know the nutritional value? Tastes to me like it's pretty lacking.

You could drain it, and saute it with garlic, a little butter or olive oil and some spices. Might give it some flavor! I'm pretty sure corn doesn't have too much nutrional value, either though. We don't eat it, because DD hates it. She loooooooves peas though.

Dh's family eats that stuff all the time. they call it "Pozole". They cook it like soup, with meat and have the sides to the side, like onions, cilantro, lemon/lime, tomates, lettuce and whatever else you'd want to add to it. Its good and full of flavor.

Use it like a grain or bean. I dig it. Now that I think of it, I could probably use it in Mediterranean and Middle Eastern quite easily. Falafel, tabbouleh, Dahl mahkni, etc. thanks for helping!
