need help with cookies please!!!

posted 30th Nov
so i have to make 4 dozen cookies for my sons daycare center. i made a batch at home as a test run to make sure i dont F* them up! lol i ended up making chocolate chip cheesecake cookies! they are soo good but super soft and they fell apart easily. idk what i did wrong.

i followed this recipe step by step:
http://www.food.com/recipe/chocolate-chip-cheesecake-cookies-385911

heres my issues!
i had to cook mine for about 12-13 min (maybe bc they were bigger?)
the cream cheese said soften so i let the package sit out with the butter to soften for about 1-2 hours...
maybe i should let them cook longer and cool longer? i only have 1 tray to bake them so i only let them cool for maybe 5 minutes then took them off the tray (which they kind of sticked) and stacked them on a plate.
before i went to bed i put all the cookies in a tuppawear container and stuck them in the fridge. if i want to eat them they are completely stuck together and i have to tear them apart with a fork to seperate them, but they CRUMBLE!! still good thought! haha

HELP PLEASE!! i need these to be perfected by next week!!

After you make the dough let them chill for an 30-hour in the fridge, that'll make the butter and cream cheese harden so they don't "melt" while they cook. After you bake them let them cool off before you take them off the tray and then take them off and let them cool on a rack.

Buy some parchment paper and put that down on your cookie sheet. Pick the whole piece of paper up and set it aside and let them cool thoroughly.

This will also keep them from sticking, and keep your pan clean.

Quoting BC Mama:" After you make the dough let them chill for an 30-hour in the fridge, that'll make the butter and cream ... [snip!] ... After you bake them let them cool off before you take them off the tray and then take them off and let them cool on a rack."

i was thinking the cooling part was my biggest issue, and the dough was REALLy soft, in between batches i put the dough in the fridge and that seemed to help the texture anyways. so your saying i should put the dough in the fridge before i cook them?! i hope that helps. and for the cooling part... do i let them cook on the same tray i cooked them on or can i move them over to the cooling tray? and what about how they seemed to stick to the tray? n my 'cooling tray' isnt a cooling rack, im using a tray that i think is used for broiling steaks on, it just has slots on the bottom.

No, they shouldn't stick. If they do I wouldn't try spreading anything on the pan.
