When you mixed it up was it clumpy? Letting the cream cheese cool to room temperature keeps the cream cheese from clumping up when you nix it.

no it was smooth and really soft. and i let the butter and cream cheese cool to room temp. they sat out for 1-2 hours.

Yeah, I would set it out, otherwise it will be lumpy and not smooth.

Yes put the dough in the fridge before you bake them . I would definitely use parchment paper for the sticking issue. When they're done baking let them cool for a minute on the cookie tray you baked them on, if they're too hot they'll still be really soft and fall apart. Once they've cool off for a few minutes transfer them over to your cooling tray. I'm sure what you're using is fine. I usually use a wire rack for my cookies.
