I would make it all but then only put some in the tin, so it's half to 2/3 full then use the rest for cupcakes or something like that.

Depending on what I was making, I'd make the whole lot and put it in the 8x8, if it was brownies or something you'd just end up with deeper ones rather than shallow ones, turn the heat down a little bit and leave it in a big longer.
Or if that can't be done, make the whole mix and just put half of it in the tin and make 2 lots
