homemade quesadillas?

posted 28th Nov
Im making them tonight with chicken and cheese etc. I have the soft tortilla shells...ive never made them before. Do i just put it in a pan and cook it plain, or should i put a little oil in the pan? I want them to get a little crispy on the shells

I spread a little butter on the outside of the tortilla, then throw it in the pan. It gets it crispy.

What is pico de gallo? ive heard of it but i cant think of what it is. I am using a rotisserie chicken for the chicken because they are so delicious. And just using shredded cheese and sprinkle some salsa in the middle then gonna dip it in sour cream.

I use a non stick pan so I don't need to add any oil or butter.

I always add chicken,m cheese, sauted peppers and onions and I make a sauce out of jalapeno juice, cumin powder, cayenne pepper and mayo and spread it on the inside of the tortilla shell.

I bake mine in the oven and do like a quesadilla casserole deal. I rub a little nonstick spray on the bottom of two tortillas and put them side by side in a dish. Then i put shredded chicken, precooked bacon, shredded cheese, and a little bit of hotsauce on top of the tortilas. Then i add two more tortillas on top of that, side by side, and repeat the ingredients. Then i add another layer of two tortillas, side by side and rub a little nonstick spray on the top of those two, and add shredded cheese only to the top. Usually about 30 mins at 350 degrees and theyre good to go, sometimes i leave it in longer if the cheese isnt melted to my liking. Then i just cut the "casserole" into rectangles and serve it with sour cream, salsa, and nacho cheese. Its a lot less messy IMO and u can make enough for the family all at once instead of quesadilla after quesadilla.
