frosting help!

posted 28th Nov
I'm trying out new frosting recipes since I don't have and may not end up buying meringue powder for the recipe I usually use.

I just tried this one and it tastes okay, but it just slides right off the cupcake. I'd rather try a different recipe than that one over again...

A small trick I learned from tv is to actually use cold butter when you make buttercream. Put it in the mixer cold and beat it until it's soft, then add the sugar and milk n such. It helps keep it's shape and it's more fluffy.
You can also add a little more sugar if it's too thin.

Does it have to be vanilla?

The recipe on the Hershey's cocoa powder box is AMAZING!!!

1/2 cup butter or 1/2 cup margarine
2/3 cup cocoa
3 cups powdered sugar
1/3 cup milk
1 teaspoon vanilla extract

FROSTING DIRECTIONS: Melt butter.
Stir in cocoa.
Alternately add powdered sugar and milk, beating on medium speed to spreading consistency.
Add more milk, if needed.

Oh yeah and the cake recipe on there is jjust as good

I did add sugar. It didn't work and would end up being really too sweet if I added any more. I'll have to try the cold butter! The one I usually use calls for shortening, not butter.

I love this one but usually i tweek it a bit by putting more cream and vanilla and add sugar if it gets watery. It's nice and think and helped me sell lots of home made cupcakes!

Vanilla buttercream is super easy.
Buttercream Frosting
Ingredients
1/3 cup oganic butter melted
2 teaspoons organic vanilla extract
2 cups organic powdered sugar
2 organic egg whites, beaten (pasteurized)

Directions
In a medium mixing bowl, use an electric mixer to blend the butter and vanilla. Slowly add in the powdered sugar. Mix until creamy.

In a separate bowl, beat the egg whites until frothy and bubbly. Add to butter mixture and beat until creamy, usually 2 to 3 minutes on medium-high speed. Use immediately or cover and refrigerate until use.
