That surprises me... usually most restaurants require the managers to take a Food Safety course and the other crew members have to have basic training as well.

if the turkey won't fit in your sink, fill up the bathtub with cold water (and put it in the tub), you want to cover the turkey (in it's original wrapping) with cold water , make sure you change the water every 1/2 hour!

haha that reminds me of when i was 13 my mom had to work on thanksgiving morning. so she left a note for us to wash the turkey and put in in the pan and what to put on it.
well we assumed when she said wash, we were supposed to actually wash it. so we put it bath tub and washed it with dish soap
