Cut her sandwich into a fun shape
Get the yogurt that comes with crunchies
Single serve apple bags

You can google fun food for kids - one dad made Spongebob sandwiches (they looked AMAZING).

How about asking the kid what they want and maybe get them to help to give them a sense of achievement?

My kids love it when I pack them greek yogurt, but add a few sprinkles to the top. They also love when I add hummus, so they can dip their veggies.

My kids are 6,7, 10 and 12 and i pack them in a container sliced carrot, sliced cucumber, leaf mix (Lettuce/rocket/baby spinach) and cherry tomatoes and pack a small dressing container with salad dressing/salad cream to go along with it, I'll often pack a pita pocket along with this so they can make a wrap if they choose to, Then i pack a container with diced/chopped strawberries and kiwi fruit with a small dressing container of cream to pour over, They take a small bottle of water, A small juice box, Some crackers and cheese, And a whole fruit (apple, orange, banana, mango ... Whatever they fancy) None of it (the food) ever comes home, Where as if i buy store bought pre-packed lunches (Chips, bickes, muselie bars ...etc) They'll bring some home and put it back into the snack bin.

And you could always just ask what she'd like to have   Get her input on it, Get her to help put it together the night before.
