Smoked turkey

Smoked turkey

i want to smoke a turkey for Thanksgiving. so i think it takes 8-12hrs to cook it ill have to get up supe early...SO will be working so its just me doing it! im going to use wood thinking fruitewood like applewood... i read you can put water, wine or fuite juice to add more flavor.
Any advice is greatly appreciated!! recicpes are welcome!
i want to know about your experiance!!

Apple wood, or hickory chips smoked in white wine for 2-3 hours. Did it at culinary school. Brine it first.

yes i want to do one of those!! any particular white wine?
brine with? crushed or powder garlic& season salt?

Just a cheap white wine.
And no, a gallon of water with one cup of salt, and whatever seasonings you'd like, heat until dissolved, add a gallon of ice water, make sure the solution is cold, then put the turkey in it. Brine for 8 hours.

1 gallon of water, 1 cup salt, and your choice of seasonings, in a pot and heat until the salt is dissolved. Then add a gallon of ice water to that solution. Then put the turkey in the solution for 8 hours. take it out after 8 hours, rinse it off, then smoke it.

oh smurf it takes a long time
so i need to buy the fresh turkey tues night then brine over night or buy it tuesday then brine it wed during the day then ill wake up super early to start smoking it. that sounds correct?

No prob. I would've bought it yesterday. It takes 2 days to thaw from the store.

You also have to leave the turkey uncovered for a couple hours so it can form a pellicle. It's like a skin that the smoke clings on. Its hard and tacky. But goes away after smoking.

No problem. Let me know how it comes out. And smoke it until the internal temperature is 180. I'm pretty sure it's longer than 8 hours, but I don't remember.

i looked up one reciep it days 10pound turke takes around 10hrs.
ugh im might have to pull a all nighter hahaha i havent done that in many years!!
oh i will take pictures and let you know how everyone likes or hates it ahhahah
