So I was entrusted with the pie making this year which I have just a tad bit of experience with so anyway..
I see these pictures with apple pies that have this nice shiney, yummy looking glaze over the top. How do I do this? Is it just egg or do/can you mix something else in there with it?

Egg & Milk. If you use butter and sugar you'll get a crispy type top.

I think there are a number of different ways to achieve that, but we always used a milk / butter mixture.

If you add sugar, I don't know that you'll get the same effect. Sugar caramelizes and browns and gets crispy. A standard strudel topping is sugar and butter. I guess it depends on your ratios but if you want that super shiny, I'd go with an egg and a couple of tablespoons of milk whisked together and applied with a brush.

If you want sweet with the shiny I usually add a little bit of white sugar after they are finished baking. makes it taste amazing and it looks like it's out of a magazine.
