Quoting Katrina,Phia&Easton's Ma:" So I was entrusted with the pie making this year which I have just a tad bit of experience with so anyway.. ... [snip!] ... shiney, yummy looking glaze over the top. How do I do this? Is it just egg or do/can you mix something else in there with it?"Egg & Milk. If you use butter and sugar you'll get a crispy type top.

Quoting Katrina,Phia&Easton's Ma:" Can I mix brown sugar in with the egg and milk? And should I put just a little bit of milk in?"If you add sugar, I don't know that you'll get the same effect. Sugar caramelizes and browns and gets crispy. A standard strudel topping is sugar and butter. I guess it depends on your ratios but if you want that super shiny, I'd go with an egg and a couple of tablespoons of milk whisked together and applied with a brush.
