Type 1 Diabetes

I hope I am posting this in the right place, if not I am sorry. My 3 year old niece has type 1 diabetes and I know literally nothing about it. Anyways, I will be spending Thanksgiving with her and I am not sure if what I am making she can have or if there are ways I can change the recipes so she can have them. I am planning on making homemade cranberry sauce which just has cranberries, sugar, and water. I was going to switch the sugar with sucralose, but I know fruits have natural sugars, so could she still have it with the cranberries? I am also making green bean casserole. And I was also going to make pumpkin bread and pumpkin cookies cause my freezer is full of puréed pumpkin. Can I just switch the sugar out with sucralose or should I just look for diabetic recipes for the bread and cookies? Sorry for all the questions, but my mom said that they have to be so careful and I don't want to make anything that she can't have. Thanks!
