Thanksgiving side dishes

What are some side dishes I can offer to purchase and prepare for Thanksgiving this year? We live with my in-laws so I can't use the oven, and stove top is iffy since MIL will be cooking the turkey and whatnot. I want to help contribute to thanksgiving though. I'm use to providing a handful of sides for my families dinner but due to my moms divorce I doubt that's happening this year. My MIL normally does everything herself so that makes me want to help even more (plus she's kind of a bad cook..ok she's a REALLY bad cook so I want something edible   ) but I also don't want to like step on her toes or anything since she's use to cooking everything.
So anyway the point of that ramble is, what are some things I can offer to make that don't require the oven   TIA

Deviled Eggs just have the eggs already hard boiled.

Do a fruit salad, use any 3 kinds of fruit im using banana , mandarin oranges, and pineapples then add 32oz of yougurt plain , a box of vanilla dry instant pudding and a tub of cool whip mix all together, chill and serve   easy peasy

I know of a few desserts and appetizers you could make without, but as for sides i can't think of anything except a salad, or a broccoli salad without bacon.

Do a Veggie tray, or a relish tray, pickles and olives etc., or a cheese tray. I kind of do a mix of all 3. You could also make a cheese ball with crackers as an appetizer. Our family usually makes a couple to munch on while dinner is cooking.

Sweet Potato and Cabbage Slaw
Serves: 6
Total Time: 15 min
Prep Time: 15 min

Ingredients

  • 2 tablespoon(s) canola oil
  • 1 tablespoon(s) lime juice
  • 1 1/2 teaspoon(s) toasted sesame oil
  • 1/2 teaspoon(s) salt
  • 3 cup(s) coarsely grated peeled sweet potato (about 1 large)
  • 3 cup(s) thinly shredded napa, or Savoy cabbage
  • 4 scallions, trimmed and thinly sliced
  • 1 teaspoon(s) finely minced serrano, or jalapeņo pepper with seeds (optional)


Directions
  1. Whisk canola oil, lime juice, sesame oil, and salt in a large bowl. Add sweet potato, cabbage, scallions, and serrano (or jalapeņo), if using; toss to combine. Serve immediately.

Ingredients
U.S. Metric Conversion chart
  • 1 cup(s) crunchy peanut butter
  • 1/4 cup(s) margarine or butter, softened
  • 1 cup(s) powdered sugar
  • 2 cup(s) Kellogg'sŪ Rice KrispiesŪ
  • 1 1/2 cup(s) semi-sweet chocolate morsels
  • 2 tablespoon(s) vegetable shortening
  • 54 mini-muffin paper cups


Directions
  1. In large electric mixer bowl, beat peanut butter, margarine, and sugar on medium speed until thoroughly combined. Add Kellogg'sŪ Rice KrispiesŪ cereal, mixing thoroughly. Portion mixture, using rounded teaspoon. Shape into balls. Place each ball in paper cup. Refrigerate.
  2. Melt chocolate morsels and shortening in small saucepan, over low heat, stirring constantly. Spoon 1 teaspoon melted chocolate over each peanut butter ball. Refrigerate until firm. Store in airtight container in refrigerator.

    Serving size based on 2 balls.

If you can stand it, my family makes this awesome "veggie square" recipe. You need to use the oven but it's like 12 minutes and it needs to cool so you could do it the night before (we often make extra and snack while doing the heavy duty cooking so maybe you could do that and it would please the MIL).

You basically get a can of Pillsbury croissants and roll it out like it's pizza dough and bake that. Let it cool. Mix together cream cheese and ranch mix (dry in a packet) and spread that over it. Get a mixed pack of broccoli, carrots, and cauliflower and chop that up super fine and sprinkle it on top. Top with shredded cheese and REAL BACON BITS   We cut it with a pizza cutter and inhale it. I mean, snack thankfully and respectfully, and of course wipe our mouths and chew quietly.

If you hate raw vegetables this idea will suck. And I don't have the exact ratio of cream cheese and ranch mix on hand right now but the recipe does exist online (:
