I work in the Fred Meyer deli (a Kroger store) and our fried chicken season is flour and season salt. If I had to guess it would be like 1/4c salt to 1c flour.

Another thing that is amazing on chicken is to soak it in salt water (kosher salt, I don't know the exact ratio of salt to water because I kinda just guess) for like an hour or two before cooking, then rinse . I also use buttermilk or evaporated milk and pour Louisiana hot sauce in that, then season the flour with salt, cajun seasoning, garlic powder, cracked pepper and more kosher salt.

If you are talking about frying lol....

If roasting, just be sure the skin is really dry and well coated with seasoning and olive oil (I still recommend soaking it in salt water before hand)
