My stew recipe is very basic. I usually just by the beef that is pre-cut for stew, throw it in some (OK, a lot) of beef broth with potatoes, carrots, and celery. (Whatever other vegetables you would prefer as well). And then let it cook until the veggies are tender. I don't have a crock pot, so I do it on the stove in a large pot.
To thicken the broth, I make a Rue (Is that the right spelling?) By melting butter to a pan, adding a little flour at a time until the flour absorbs all the butter. Than I drop it into the stew and within moments it thickens it up for me. Season to taste. :p
Chili is a great idea! My dad makes an amazing chili, I will have to call him to get his recipe!
