re: What to do with shredded chicken?

My dad used to take leftover shredded chicken/turkey whatever we had and make gravy and put the meat in it then salt and pepper it then ladle it over bread yum lol

I just gotta go look and see what else I have to see what I can make. I've been trying to eat up all the stuff that is taking up room in the fridge and pantry before I go get groceries again. For some reason I buy stuff that I never use lol

Well.... I took a little cream cheese and mixed it with hot sauce, then stirred in the chicken. I put that on a tortilla with shredded cheddar cheese and made a quesadilla, which I ate with picante sauce. It was delicious lol

get a bag of shredded cabbage, some teriyaki sauce, and a handful of peanuts. add all ingredients to a large wok, and cook together. YUM!!

One of my favorite sandwiches to make with shredded chicken - shredded chicken mixed with mayo / salad dressing (sometimes I use dijonaise if I do not add all the extras, not a good flavor with the rest of the ingredients) - but then I cut a handful of red grapes into 1/4's and a stalk of celery, mix it in with the chicken and dressing / mayo and season it with a little salt and pepper. I know grapes sounds weird, but it adds a sweet crunch in there, it's really refreshing. I'll be doing a thanksgiving version of this after thursday but with cranberries instead of grapes and turkey instead of chicken.
