Mine isn't really a step-by-step recipe. I basically cook by heart and by what "feels" right. This is how I do it:
1 package of stew meat, cut into bite-sized pieces
Potatoes (usually one per person and then one for the pot) cut into chunks
Carrots (3 or 4) cut into chunks
Celery (3 or 4) cut into chunks
2 boxes of beef broth
1 large onion chopped
Butter or olive oil (to saute)
garlic, salt, pepper, and rosemary to taste
3 packages powdered herb gravy mix
In a large pot, melt butter or heat olive oil. Saute onion, celery, and garlic until onion is translucent. Add meat and saute until brown on the outside (seared). Add carrots and broth. Cook on medium heat until carrots are just about tender, then add potatoes and cook until they are done. Remove some of the broth and in a bowl mix it with the gravy mix. Add back to the pot. This will thicken it a bit. If you like it thicker, mix in some cornstarch with the gravy mix.
I usually serve it with a loaf of warm rosemary olive oil bread OR roasted garlic bread.
