Best way to fry chicken legs?

posted 11th Nov
I always just roll them in flour and fry them in EVOO. Any tips? Sometimes they turn out GREAT and other times they are soggy and gross. Lol.

Could hey be turning out soggy when maybe the temp of the oil is hot enough? That's always my problem.

Sounds like your oil isn't hot enough if they are soggy

I just made some the other night. I only fried them for a couple minutes then stuck them in the oven to finish. They were nice and crispy.

First of all, I'm not pregnant. Second of all, I pay $20 for extra virgin olive oil, you can bet I'm going to fry some chicken in it.

....That wasn't the question.

OP, like the others have said, it sounds like your oil isn't hot enough. What I do is I soak them in milk for at least a half our, roll them in flour/seasoning mix, add a little of the milk to the flour to make it kind of clumpy, work it through with your hands to make the clumps small. Re dip them in the milk then roll them in the flour again. Fry them until golden brown then finish them in the oven.

Awesome! It is sooo good that way, make sure not to add too much milk, just a few table spoons, you don't want it soaked in milk KWIM?

You fry them in olive oil? Olive oil is not a frying oil. Peanut, coconut, grapeseed or vegetable oil are good frying oils. I'm surprised you didn't burn anything using olive oil.

I always dredge my chicken in seasoned flour and let it stay in a ziplock bag in the fridge for 24 hours. Then dip in egg (or buttermilk), then dip in seasoned bread crumbs and deep fry. Either in my deep fryer or using a cast iron skillet.

It fries in olive oil fine. I fry everything in olive oil. I have high cholesterol and can't use any other kind.

Olive oil can only get so hot before it burns which is why it's not for frying. Which is probably why you are getting soggy chicken. There are other healthy oils you can use that have a high smoke point, such as the few I suggested minus the veggie and peanut oil.

I do it this way as well. I fry in canola oil.
