Cream Cheese Crisis....

Okay, so for LO's birthday, I'm baking her a banana cake, with cream cheese frosting with walnuts.

Here's where it gets tricky. I have to work until 11PM tonight. My daughter's party is tomorrow, and I want to get the cake done tonight after I get off work. The cake takes an hour and a half to bake, and I'll be baking two. One right after the other because I only have one bundt cake pan. I'll be making the cream cheese frosting also.

So my big question is: Can I leave the cream cheese out on the counter to get room temperature for 10 hours and it still be.....okay? I know I can do that with the butter, but I'm not sure if it works that way with cream cheese too. Also, does anyone know if I can just toss the frosted cake in the fridge until tomorrow?

I'm going to be up until 4am after work just baking this cake....

I think 10 hours is too long for cream cheese to be out because of the dairy aspect. I found on a website that you can heat the oven to 200 degrees and place in oven for 10 minutes. This sounds better than leaving it out for 10 hours

If I was using the cream cheese in the cake, I would totally do that, but I'm using the cream cheese for the frosting and it can't get heated up or else it won't really set on the cake without looking more like a glaze. Argh. I'm at a loss here. SO gets off work at 8, but probably won't get home until 9 since he's going to be on the hunt for a balloon pump. Maybe I should take the cream cheese to work with me and on my lunch I can take it out and set it on a counter....take it home with me? Lmao I don't know.

Take it out while the cake is baking and put it in a bowl. If you manipulate it a little with a spoon it'll soften up faster.

Your cream cheese would have a lot of bacteria on it and begin spoiling by then. You could get people sick. You can make your cake and keep it in the fridge over night on the top rack. Be sure there is nothing that smells strong in there that's open; that could make the frosting taste funny, or just put baking soda in your fridge if you have to leave it uncovered. I always just do a quick heat and then make the frosting while the cake bakes, clean up, prep for next step and work on it again. I've had to do the late night bit before for a customer.. Not cool!

I would just take it to work and set it out there.

Eh I'd do it lol. Never had food poisoning from my own home. Always been other places. Hell I'll even eat tater tots cooked the night before and left out lol

Hm, I think this might actually work. I'll be spending at least 3 hours baking so I can start making the frosting around 3am and that would mean the cake could be done and ready to go around 4:30ish!

I didn't think of the funny taste if I had something left open in my fridge. I just checked and I think I'm good. It doesn't even have a smell in there really. I'm curious, why put it on the top rack?

I is not alone!

SO thinks I'm so weird for doing that. I think I'll just stick with doing the cream cheese after the cakes are done. I know I probably wouldn't get sick, but my luck has been kind of iffy lately,lol.

Put it in a bowl and then set on the top of the oven, will help it soften up fast without any work!

Would you be able to bake now? Cake will stay good for awhile. Use can bake and cool them, then wrap tightly will cling wrap, freeze until a couple hours before you need it

I spent the last four years of my life baking in the military. Lol. You are welcome!
