re: SAUCELESS spaghetti ideas?

i do this too! and sometimes i ad some artichokes to it too.

i also make what i call "pregnancy pasta" because i came up with it when i was pregnant with my daughter, lol. i saute garlic, some diced onion, and sliced black olives in a pan. i add a little cooking wine, some black pepper and red pepper flakes, and let that reduce a little on the stove. then i toss in some broccoli (i'm lazy and i used frozen, so it's usually partially cooked in the micro first) and some imitation crab and/or lobster meat, and let that cook a little. then i add the pasta (that i have tossed generously with olive oil and maybe a small pat of butter   ), and then mix it all together nicely and add any extra salt (bc the cooking wine is salted already) or pepper if it needs it.

we do 2 pretty easy pasta dishes. one is just olive oil, minced fresh garlic and red pepper flakes. Toss with a veggie and/or a protein and its pretty tasty. A drizzle of balsamic reduction is amazing with it too!

the other is a compromise on alfredo. hubby loves it-i hate it. reduce 1 cup chicken stock and 1/4 cup white wine down to half then add half a block of cream cheese. I melt it in the microwave a little and add some italian seasonings and parm-but its tasty without it. toss with pasta and add veggie/meat. We usually do the smoked turkey sausage with it-but its tasty with chicken too!

i'll definitely be making it soon   the kind i made last night (just italian breadcrumbs, olive oil, parmesan, etc etc) the kids DEVOURED.
