Have you ever played with fondant? I think it'd be cute to do a two tiered cake and have the bottom one plaid pink and then have the top tier with little hippos painted around the edge, depending on how good you are at drawing. For little kids though, I would personally do cupcakes.

No I haven't everyone I talk to tells me it taste nasty lol. there will only be my 2 girls and one of their friends they rest family. My DH is the artist don't ask me to that is for sure lol

What about a regular shaped cake & use fondant to make the hippo like

You could do something like this but pink and put ribbon on it for a little bow

Homemade fondant doesn't taste too bad, and is fairly easy to make, just practice with it first  

Do you have a Dairy Queen where you live? They can print an edible image on the cake, could do a hippo on it?

How much sugar is in it? My SIL is type 1 so I try to watch how much sugar is in everything

I don't know if ours here does a lot of the cakes I would have to call for sure to ask. I'm half temped to take a photo of it in and see if a place can do it for me

Instead of fondant, you could draw the outline of the hippo (by cutting out the image from one of the plates you got) and fill it in with frosting. You could also cut out the hippo from one of the plates and just place that on the cake and decorate around it.
