Smurf, I'm such a southern cooker that I really don't have any uber healthy recipes. You can always cook regular things and just tweak them to make them healthier...like with spaghetti use ground turkey, wheat noodles, and make your own sauce.

Chicken (or shrimp) and vegetable stir fry, with whole wheat penne, olive oil and Parmesan. Or a baked fish like tilapia or salmon with steamed veggies or stir fry.
