I've always been one to chuck eggs out when they're a week before their sell by date. But I can't get to the store for more and the eggs we have say sell by oct. 15. Tomorrow! I'm thinking toss them out, but I really want to make these pumpkin bars that call for one egg. Use it or skip the pumpkin bars?

i'd still use it. it's a Sell By date, not a use by date. they're still good for at least a week after the sell by date.

Eggs are something that are still good for a while after sell date. I think I heard 3 weeks one time! Anyways if it floats in water it's still good, if it sinks it's bad.

Opposite way around! If it floats its bad! Sinks you're good. I never go by dates on eggs.

Atleast I know I'm not the only one who is paranoid about sell by dates lol. I'm not that bad, but if it is one day past the sell by date I dont use it. My Husband makes fun of me all the time over it. I'd say the eggs you have are safe though.

Oops! You're right don't know what I was thinking considering they always sink when I put them in water.

I've used eggs a month past the sell by date as long as they have been stored properly.

You are like my husband! We always have this conflict. lol
As long as eggs are stored properly, they last a good long while after their "sell by." for the purposes of a pumpkim bar, they'd still be fine in 3 weeks from now.
