I start with a base of butter and flour, 3 tbls. melt the butter, add the flour and saute until flour turns a light brown and no lumps. Add some milk, I eye ball it but about a cup. Stir on high until it starts to thicken. Then add a whole 8oz block of cream cheese, stir until melted. when you start the base start to saute the thawed spinach in some butter and garlic. drain. Add to the base when it's ready, stir, pour in oven safe bowl, top with parm cheese, bake at 350 until cheese in melted and has a brown top if you like that. Serve!
