Last time I made them I used a box cake mix (red velvet) and cooked it like normal. Then once it cooled I crumbled it into a bowl and added a tub of vanilla frosting. Then formed it into balls and put them in the freezer for like 15 minutes. Then I melted white chocolate pieces (the kind made for candy making. I got mine from Michael's) and got the cake balls out of the freezer. Then I dipped the sticks into the chocolate then stuck them into the balls and dipped the balls into the chocolate. From there you can dip em in sprinkles too, but I colored my white chocolate and didn't want too much color.
I put the dipped cake pops on a wax paper lined cookie sheet then put them in the fridge until the chocolate was hard.
Time consuming, but so worth it
