Santa Fe Chicken Tortilla Roll-Ups


From: Campbell's Kitchen
Prep: 20 minutes
Bake: 30 minutes


Serves: 4
Every bite of these baked tortilla roll-ups is bursting with fabulous flavor. They feature the "can't go wrong" combo of chicken, picante sauce, Cheddar and tortillas, and they're ready in less than one hour.


Ingredients:



1 jar (16 ounces) PaceŽ Picante Sauce
1 teaspoon ground cumin
1 can (about 14.5 ounces) whole peeled tomatoes, cut up and drained
1 cup chopped cooked chicken
2 cups shredded Cheddar cheese (about 8 ounces)
8 flour tortillas (6-inch)

Directions:




Stir the picante sauce, cumin and tomatoes in a medium bowl.
Stir 2 cups picante sauce mixture, chicken and 1 cup of cheese in a medium bowl.
Spoon about 1/4 cup chicken mixture onto each tortilla. Roll the tortilla around the filling and place seam-side down in a 3-quart shallow baking dish. Cover the dish.
Bake at 350°F. for 20 minutes. Top with the remaining picante sauce mixture and remaining cheese. Bake for 10 minutes or until heated through.

I've never had hot sauce before, that I can remember. People put it in their ice cream.

I know; that was my initial reaction. But then I thought about it and it could kind of make sense. Sweet and salty-ish. I mean, is Sriracha super hot?

I've never tried it but I think so. It's spicy at the least.

Hmm. I'll have to work my way up to it, I think. I'm not all about spiciness so much, especially now I'm pregnant again. Heartburn? No TY.
