What to make this week?

I cook from scratch basically every day. I like crock pot meals and things that I can make ahead in the morning and toss in to bake in the evening as well as regular fresh-made meals.

2-3 days per week we don't get home til about 7pm because of DH's football practice/games, but most days I have lots of time to cook.


Looking for some things to make this coming week that are HEALTHY and kid friendly!!!

Last week I made:
1. Roast chicken, roast butternut squash, green bean casserole
2. Chicken & Dumplings salad.
3. Whole roast Pork Loin with kale and roasted spaghetti squash
4. Pork Chops with broccoli rice and a salad
5. Lasagna with fat-free ricotta, spinach, chicken sausage (OMG, so good!)
6. Chicken tacos with spanish rice and black beans.
7. Chili (made with super lean beef)

So what should I make this week?

I posted a recipe earlier.

4 chicken breasts, diced/chunked
2 cans of cream of chicken
1- 8oz block of cream cheese
1 package of dry Italian seasoning
cook on low 4-6 hours
boil a box of medium shell pasta, drain and add to mixture and stir.

We did this last night

My husband won't eat cream cheese. And that doesn't seem very healthy to me.

I made homemade pizza last week - it was diced chicken seasoned with a little salt and pepper, sliced red and orange peppers, sliced onions, (onions and peppers sauteed beforehand) on a crust with bbq as the sauce. SOOO good. I didn't make the crust homemade, but you can very easily if you have time. y

I dont know. I live in the south. That is about as healthy as it gets here. Otherwise, everything is fried.

What kind of crust did you use?

Wonder if I can find a good healthy pizza crust recipe. Letting my 3 year old put all his own toppings on a mini pizza and watch it cook could be a great way to encourage him to try new veggies (like mushrooms and peppers, which he knows, but won't eat)

And I make it very healthy by making thin-crust and adding spinach and things to mine

I lived my whole life in the south, but I just lost 30lbs and while I do love me some southern cooking (not Chicken & Dumplings!) I am trying to keep carbs as low as I can (substituting 50% taters for cauliflower in my mashed potatoes, spaghetti squash for regular spaghetti noodles, etc) and use low-fat or fat-free dairy 99% of the time.

I've gone 3 months and haven't gained ANY back yet, so I'm hoping that even though I'm pregnant, if I watch what I'm eating I can avoid gaining TOO much weight.

Plus, if it doesn't have veggies in it, I don't serve it. I leave big hunks of celery, okra, and carrots in my chicken n dumplings. I often edit recipes to ADD veggies, haha.

I LOVE veggies. And so does my 3 year old. Kid eats kale and spinach

I just used the pillsbury crust from the can. I was just trying to use what I already had in the fridge and this is what happened, but it was delish! Oh and I didn't put spinach on the pizza but served a spinach salad on the side. My SO isn't supposed to eat leafy green vegetables with his medicine, so I left it off. But I'm sure it would taste good on top as well.

It's not slow cooker, but I make the sauce, glaze the chicken in advance, put it in the freezer and thaw as needed (I put 1 meal's worth in a freezer bag).
Also, it says to use chicken thighs, but I use skinless chicken breast (bone-in if I can find them for better texture)

Usually I roast some potatoes in the oven, and steam some veggies, especially green beans (sometimes it's one or the other depending on business). You could just as easily bake/mash/whatever a potato and/or do a normal side salad, it's just my preference. Potatoes that are lightly seasoned go wonderfully with it. The veggies are truly just to pretend the starch isn't there  
Or sweet potato! I loooove cutting up a sweet potato and tossing it in a tbsp or 2 of olive oil and some paprika -- with any dish, not just this one (though regular potato goes better)!

Oh my goodness that just reminded me of the mashed cauliflower I make every once in a while. Sooooo yummy!

You can get pre-made dough reg and whole wheat from Fresh & Easy (which I know isn't that far from you... Or Winco, or Trader Joes ;)
