Grilled on the BBQ.

Grilled with salt and balsamic vinegar.

With teriyaki and soy sauce and a bit of sesame seeds.

i make it with lasagne.
i usually make a groundbeef tomato sauce, layer it like normal lasagne, put cream cheese layer on top, sliced zucchini on top of that and then the shredded cheese. its awesome.

i saute it in olive oil with garlic and a little onion. sometimes i add diced tomatoes toward the end of the cooking process.

You can slice them and put them in your broiler since you don't have a grill.

I steam it and top it with part cheese. I also add it to soup quite often. Or sauteed with a touch of olive oil.

We often will make zucchini boats (stuffed zucchini) We just add in whatever we have.

We also really like zucchini bites, but it doesn't make much.

Steamed? Sautéed? Baked? You can cook it just about any way.

the unhealthy way  
Cut up zuchini and layer it in a pan put butter and mozzarella cheese and bake it

Forgot to mention zucchini bread or muffins.

Half it length wise, take some of the insides out and chop it up. Make some rice, stir fry up some chicken or beef, onion and the inside of the zucchini bits and some tomatoe and whatever seasonings you like, mix the rice and stir fry mixture up and Stuff the halves and bake them. Yum!

I use zucchini A LOT in soups and sauces. Try making a chicken broth (either with chicken boullion stock or make your own by boiling chicken), legs and thighs work best IMO, add chunky potatoes, zucchini, chick peas (canned is fine), chopped carrots and celery, a pinch of curry and teaspoon and 1/2 of salt, boil then simmer (about 40 minutes) and serving it over a bed of basmati rice. Extremely healthy, filling and all natural ingredients.
