I spoiled him tonight.

He is more then spoiled. I am sending him to work tomorrow with homemade taquitos, homemade Salsa, and chips. More then enough for him and his partner.

That looks so good!  

Aw does he share his lunch with his work friends, too? lol I thought it was just mine, I'm always hearing "so and so said you are a great cook" and "they always say you look after me so well" lolol

I try to pack enough in his lunch to share. You never know who is going through tough times. I just hate the thought of eating in front of someone else and them not having any food. Hungry or not... Ya know?

mmm what kind are those? I'm a Stay at home mom now during the week. So I have way more time to cook now!

My DH would be mortified if I tried to send him to work with a homemade dinner. haha. I'm not a good cook at all.

Those that I made for his lunch tomorrow are Taquitos (Or rolled tacos).

How I make them, I fry the Corn Tortilla on both sides for a couple of seconds, add some taco meat. (Not much, you have to roll it). Then roll it, place it into tongs, then hold it in the oil until I am confident it won't unfold. Usually by the time you get the second one rolled and into the pan, the first one is ready to be flipped. It is a pain in the ass though with all the grease. Expect to get popped!

I love cooking. Though I can't cook a pork loin or a pork roast. It doesn't matter how I season it, if I follow directions to a T, it will still come out terrible every time. I have given up on Pork Roast and Pork Loins.

I usually do it with chicken.
I what all the taquitos rolled and put them in the pan until it is all full and flip them at the same time. I do this to avoid the oil splatter

I try to avoid eating out. I am not completely 100% eating healthy, but I do what I can to stay away from foods I don't have an ingredient label to read. Not to mention we have saved so much money since we really started limiting how often we eat out.

I hate cooking. I guess that's why I'm bad at it. But I'm great at baking. I love to bake. So he loves when I make muffins, cookies, cakes, etc.
