posted 25th Sep
I have a leftover grilled chicken breast from dinner tonight and I'm trying to figure out how to turn it into lunch. Any ideas?

Cut it up into pieces...cook some pasta and toss with a light garlic sauce (easy to make)
or a mushroom alfredo sauce easy to make as well.

Garlic sauce.
Olive oil hea in a skillet add minced fresh garlic and cut uop onions really tiny. add some rosemary and salt pepper and I use garlic seasoning (roasted) and red pepper roasted flakes, fry it up a min add noodles and chicken top add some parm cheese and thats it.

Mushroom sauce....
olive oil heated with chopped garlic onions and spices
Half and half cream I ADD IN SOME MILK TOO SOMETIMES.
Cream cheese herb and garlic flavour

I add in broccoli but not always.
Cook till it thickens then add noodles. We eat this and the other one at least 2 times a week. lol

If you have a panini maker or you can do this just on a skillet like you were making a grilled cheese but combine, shredded lettuce, chicken breast, bbq sauce and american cheese. Put that smurf in a sandwich and cook it up like you would a grilled cheese or on a panini maker. It is DELICIOUS!
