My dinner entry for this week:

Cranberry glazed baked chicken
Bacon wrapped brown sugar fresh green beans
Home made mashed potatoes with onion, cheese and bacon (red skinned potatoes)





Recipe for the chicken:

3 whole boneless chicken breast
1/3 cup soy sauce
1/2 cup brown sugar
1 can of whole cranberries with sauce
1 cup ketchup
1 small onion, chopped
2 tbsp. extra virgin olive oil
2 tbsp. lemon juice
Salt, pepper and garlic salt to taste
3tbsp. butter

Put salt, pepper, and garlic salt on chicken. Spread one tbsp of butter on each. Put in dish and cover with tin foil. Cook in the oven at 350 degrees for 15 minutes.

While chicken cooks, chop your small onion and saute in pan with oil. When onions start turning clear, add lemon juice, soy sauce, ketchup, brown sugar and cranberries. Bring to boil, then let simmer.

After the 15 minutes, pull the chicken out and add the cranberry glaze to the pan completely covering the chicken. Bake for an additional 20 minutes.

Serve, then enjoy!

I must say, I did not like the idea of using cranberries because I don't like cranberry sauce. But this was AMAZING. Definitely something I want to try again! (Could not find fresh cranberries OR dried ones!)

I made cranberry almond chicken salad wraps:




Ingredients:
1/4 cup sliced almonds
1/4 cup dried cranberries
Boiling water
1/4 cup REAL mayonnaise
1/3 cup PLAIN Greek yoghurt
1 chicken breast
1/2 tsp seasoning salt
wraps or tortillas
any other toppings you like, I used shredded lettuce and fresh tomato


The night before I re-hydrated the dried cranberries by pouring boiling water over them in a glass bowl and covering with plastic wrap. Leave it like this for twenty or so minutes, then drain the water and mix in the almonds. I covered that mixture with plastic wrap and refrigerated it over night.
Boil your chicken.
Mix together the Greek yoghurt and mayo with the seasoning salt and added it to the cranberry mix.
Shred the chicken and mix it in with the rest of the ingredients.
I put it on a wrap with lettuce and fresh tomatoes from the garden.



I'll be honest and say that I do not like cranberries, at all. I thought it was pretty good considering I didn't like one of the main ingredients. I had it with some chips.

It tastes so great. I recommend letting it sit at least an hour before serving. I ate way too much.

I made Cranberry Chicken, corn, garlic mashed potatoes and a side salad.

1 Tablespoon cooking oil
4 boneless, skinless chicken breast fillets (Note below)
1 cup sweetened dried cranberries
1/2 cup apple juice
1/2 cup chicken stock
1/4 cup all-purpose flour
1/2 teaspoon Kosher salt
1/2 teaspoon coarse-grind black pepper
1 Tablespoon Dijon mustard

Directions

  1. Combine cranberries, apple juice and chicken stock in a small bowl. Set aside.
  2. In a gallon-sized plastic bag with zip top, mix flour, salt and pepper. Toss chicken breasts into bag and shake well until each breast is coated evenly with flour.
  3. Heat oil in a medium skillet over medium-high heat. Once oil is hot add chicken and cook for 5 minutes each side. Remove chicken to a plate and keep warm.
  4. Pour soaked cranberries with juice and stock into the hot pan, reduce heat to low and scrape up any browned bits on the bottom of the pan. Stir in mustard and add chicken back into pan.
  5. Cook for another 8-10 minutes or until chicken is no longer pink and sauce has thickened. Serve chicken with sauce atop.


Note: Breast fillets are simply chicken breasts that have been cut horizontally to be thinner and cook quicker.




My little family loved it. DH normally doesn't like cranberries and enjoyed it.

I made sweet and hot cranberry glazed chicken wings, with sweet potato fries and chipotle aoli









I went to two different grocery stores and neither had fresh chicken wings so I had to use boxed   They were really good but they would've been better if the wings were homemade.  

Recipe:

Box of breaded chicken wings (or you can make your own from fresh or frozen, just dredge in flour before cooking)
can of jellied cranberries
equal parts sugar and chipotle (I used about 2 teaspoons, you can use more or less depending on how intense you like the flavour)
1 large sweet potato
1 medium regular potato
corn starch (to lightly dredge sweet potato fries before cooking)
2 tbsp mayo
1 teaspoon chipotle

If you can't find chipotle in your grocery store I'm sure a regular hot sauce would work just fine.

Pretty easy; cook chicken wings according to directions on box (or if cooking from fresh, dredge in flour and cook in oil, about 5-10 minutes each side until golden brown). While chicken wings are cooking, empty can of jelled cranberries into saucepan. Mush up with a fork and cook on medium heat until it turns into more of a liquid (I added about a quarter cup of water to loosen up the consistency). Once cranberries are *liquified* lol add chipotle (or hot sauce) and sugar. Stir together, and simmer on medium low heat. When the chicken wings are done take some cranberry sauce and toss chicken wings in it. Throw it back in the oven for 5 minutes to soak in.
Sweet potato/ regular fries.. cook according to your favourite recipe. If frying in oil make sure you only cook the sweet potato fries on medium because they burn fast!

Chipotle aoli.. fancy name for mayo and chipotle. I added about a teaspoon of chipotle to 1-2 tbsp of mayo. I also added just a dash of sugar.
