Super cheap dinner ideas...

posted 18th Aug
Okay ladies, we are SUPER tight on cash right now, adn we need some ideas for a very cheap, filling meal.
There's 3 adults and a child eating.
We have about $13 to spend on a meal.
Our only ideas so far have been mexican hot dogs(tortillas, beans, hot dogs, cheese, salsa) and tuna casserole (velveeta shells and cheese, tuna and a can of peas)
We've over-eaten pasta.
But any ideas would be great!

Chicken, rice and steamed veggies. Rice is a great filler and is cheap a whole grain.

Same boat here this week. We are having veggie soup made in the crockpot & bean burritos with this recipe for the beans:

I also have a stockpile of canned beans so I am planning a throw it in the pot bean soup or veggie chili and I also have spaghetti ingredients so that's on the list as well.

We are also planning on visiting a food bank this week for a little extra help.

Ramen noodle stir fry

Make noodles according to package.
Use either beef tips or chicken.
Once the meat is cooked, add onion, broccoli, basically your choice of veggies, and soy sauce to taste.

Serve the noodles and spoon meat/stir fry mixture on top.

Rice is a very much overlooked and under appreciated staple to a good diet. Some folks slam it because of the amount of starch that it adds to your diet. You can cook it a variety of ways and stretch out a food bill. Buy the real stuff and get a real rice cooker. Don't go with Uncle Bens. Rice cookers are fairly cheap as is a bag of rice. I like Hinode or Calrose for brands. You can get either brand at most stores. A 10 pound bag of rice will go a long way and you can pair it with just about anything.

I also make an egg drop soup by taking a package of Ramen noodles and cooking it. When it is nearly ready to serve, crack an egg and scramble it in a bowl and stir it into the soup. It adds a little something and isn't expensive.

I love my rice cooker! It is small, but we are a small family so none goes to waste. I bought like a 20lbs bag of rice from Costco, and it lasts forever
