I've never made em in the crock pot, but I just boil chicken breasts, add some bouillon and seasoned salt and some pepper and cook until done. Then I shred the chicken, and cut up the veggies, and voila, chicken tacos!

This is how my mom taught me and I've always made them this way. I boil about 3-4 chicken breasts. Then shred the chicken, at a can of tomato sauce, onion, garlic, and consome. It's like chicken bouillon but you can find it in the Hispanic isle at your grocery store. It has a little rooster on the front. Then I sauté all of that together and put it in flour and corn tortillas with lettuce, tomato, sour cream and salsa.

Well I always make a side of rice and beans with it, so I'll only cut up lettuce and tomatoes to top the tacos with. But the peppers sound good. ooh, and some mexican grilled onions. <3 yum!
