Does anybody know of a chewy oatmeal cookie recipe? All of the recipes I've come across have bad reviews saying that the cookies are solid as bricks.

I'm really bummed that I haven't received the 2 that I ordered AGES ago.   I was going to give them as Christmas gifts to my 2 best friends because they are a charity thing. I either want my books, or my money back, Courtney.

Banana Nut Bread.
(home made)

Ingredients
1/4cup honey
1/4cup real maple syrup
2teaspoons vanilla
2 eggs
3 bananas, mashed
1/4cup milk
2 1/2cups whole wheat flour
1/4cup ground flax seeds
2teaspoons baking powder
1/2teaspoon baking soda
3/4teaspoon salt
Directions

1. Pre-heat oven to 350°F.
2. Stir together all the wet ingredients (first 6) in a large bowl.
3. In a smaller bowl stir together the dry ingredients.
4. Add dry ingredients to the wet and mix until basically smooth.
5. Pour batter into a well greased loaf pan and place into the oven to bake for 50-60 min or until tooth pick comes out fairly clean.
6. Enjoy!

I know that the girls that ordered this through Courtney ended up getting screwed over, but if I ordered it through Cafe Press, would she still get the money for it? I'd really like th have the cook book, but I really don't want my money going to a scammer either.
