baked goods truck food

I'm brain storming on what other kinds of recipes I should perfect. here's what I have so far.
Stuffed brioche (french bread loaded w/butter that looks similar to a pretzel) with the option of being turned into french toast for a small additional fee.
cupcakes
slices of cake and pie
individual tarts and cheese cake.
small soft pretzels w/ home made dipping sauces such as cheddar and jalapeno
home made toaster pastries filled w/ homemade jams and other fillings.
In the summer: home made ice cream and ice cream cookie sandwiches.
Cakepops (baked balls of cake, not the mixed kind you make w/frosting) filled with lemon curd, cream or chocolate ganache

I won't have a sheeter just yet, so things like croissants and turnovers aren't possible yet.

anything else that you'd find fun and exciting?

I would make diff types of cookies. People LOVE cookies.

I think you need cookies and some savory type stuff. Maybe mini quiches? Small meat pies?

well, some of the brioche will be filled with things like mushrooms and cream or chicken hash. definitely savory stuff.

Doh! how did I forget to list cookies? Of course it will have cookies. My husband's blue ribbon cookie recipe is what sparked this whole idea. all sorts of cookies.
And yes, he actually won a blue ribbon at the state fair last year w/his cookie recipe.

Yeah I just think that more people would want less sweet and more savory later in the day you know? I like sweets in the morning but as the afternoon rolls around I want something savory first and maybe something sweet later on. IDK I was just thinking more variety of savory would be good.

oooo whoopie pies. Tarts are on the list. IDK how to make cannolis. I think I'll leave those to the italian bakeries.

Red velvet whoopies are the bomb and so are chocolate with coconut cream filling!

I could probably experiment with some flavors.   Piper likes the red velvet whoopie pies from a local cupcake shop. They only sell them in Feb though. I personally don't like red velvet, so she'll have to be my taste tester.

may sound cliche but if your already making the dip for the pretzels why not Frito pies? easy, quick, and awesome for lunch, and kiddos might like them. nd maybe simple things for kids, pb&j wrap, turkey and cheese wrap with ranch, etc

no frito pie. this is a bakery truck, not a lunch truck and it sure as hell isn't in texas.

Well excuse me for giving an idea. The "bakery" truck here in ALASKA offers things like that for kids

no need to get snippy. That's pretty ridiculous that a bakery truck offers things like frito pie. might as well call it a food truck and leave it at that. kids can have cupcakes, cookie, toaster pastries. I've got plenty of good things to offer kids w/out having slop like frito pie.
