What sides for stuffed bell peppers?

I'm making stuffed bell peppers for my parents tonight. They have salsa, ground beef, rice, cheese, and black beans in them. My mom said she used to have mash potatoes with them but her mom made them like meatloaf with ketchup on top. These are more mexican style and I'm not sure what to make with them. Any ideas?

So you are making mexican stuff bell peppers? I'd go with yellow rice and a salad.

Ohh I never heard of making them that way, I mix mashed potatoes and cooked ground beef together and put them in the peppers then I sprinkle italian breading mix on top and a little ketchup and stick them in the oven.

Ohh OP if you are going to do rice, you should do the spanish red rice   you can never go wrong with that.
