Opinions on 1920s wedding desserts

For a wedding in September that I am possibly baking for (I am 99% sure that I will take this job as a baker in my friend's catering company) it is a 1920's themed wedding. I need some ideas for desserts that would fit into that theme but be elegant enough for a wedding. I have been looking at desserts that were common in 1920, the usual cakes, ice cream, pudding, jell-o was introduced then.

The catering company does small portions, bite size options. Some of the ideas I have thought about (but am not sure if it is elegant enough for a wedding, I know the bride will be the final approval, but I figured you ladies could lend me your opinions) are:
1) A chocolate cake (cut into small circles) stacked with layers of vanilla bean pastry cream, drizzled with a vanilla bean caramel
2) A cream puff filled with dark chocolate mousse
3) A deconstructed pineapple upside down cake, a vanilla cake filled with brown sugar cream and rolled (like a pumpkin roll). Carmelized pineapple slice on top with a cherry rum reduction.

A Lady Baltimore Cake.
And jelly was popular, it showed you were rich enough to own a fridge. So perhaps jelly in parfait glassesserved with something else to make it look high end?
Peppermint Iceberg Puffs - perfect for finger food.
Tarts were popular too
As were Eclairs

I think you're on the right track with the first two. The last one sounds great but when i hear pineapple upside down cake, I'm thinking more 1940-1960s. Off the top of my head, maybe some kind of liquor-laced trifle? I'd lookup some classical french things as well - maybe something with a little crunch for texture differential. A tuile? Or something with almond?

I was thinking of doing a vanilla cake layer, a layer of fruit compote (similar to a jelly but I will make it a little looser), another cake layer and then a whipped cream topping.

If you served that in parfait glasses that would be really cute!

The bride wants one of them served in shot glasses that she is having personalized for the day. Would doing it as a mini trifle make it seem informal? I think jello is way too informal. My only other option is a panna cotta (since it is similar to pudding, but sets up thicker in my experience) with a vanilla rum caramel sauce on top (the bride really likes rum LOL)

That sounds fricking delicious! A shot glass just seems so small for anything other than liquor in it lol

I know, it seems so small. But she already ordered them and decided that she wanted to use them for desserts. What about tuilles filled with a cinnamon cream? I could probably stand 2 or 3 in a shot glass. I am not sure how I would garnish that, hmmm something to consider before meeting with the bride in 2 weeks.
