Oh, and I bought some fabric from a lady a while ago, and they aren't on the cardboard flats, so I'm having trouble figuring out exactly what type of fabric these are. They feel too stiff/rough to be cotton. Would any type of fabric work for making cloth diapers? Or if it's not a "good" fabric to use, could I pop another layer of something in the middle to make it work? I also have one bit of flannel, but it has the white mesh like backing attached to it. Would that work for a diaper...? I'm so confused lol

Pin a disposable to a big sheet of construction paper. Trace it and use that as your base, tweak it to however it'll work best for you.
Use whatever you have around the house, baby blankets/receiving blankets, old soft towels, shirts/sheets that don't get much use.

Yeah, I can do that. How much of a seam allowance should I add? I actually have a half opened bag of newb disposables sitting around somewhere, so that gives me THAT size to work with... I'll BS it, but I'm just worried about making a bunch and then them not fitting the baby period.

Either 1/4" or 3/8". You don't want anything as big as the standard 5/8" clothing seam allowance as it will add a ton of bulk and make it difficult to lay flat after you've turned it.

Me too. The couple diaper patterns I have seen use 3/8 though.
