Pulled pork sandwiches
this is all to taste, so, do what you like
Big pork shoulder, we did a 4 lb one and have a smurf ton of left overs.
8 hours on low, or 4 on high.
Sprinkle with your fave seasonings, you can make it spicy if you want by putting a little mustard on it. Lots of brown sugar, honey, salt, pepper, ginger, garlic. Just generously cover the top. Fill in next to it just to the seasonings on top with beef or pork broth. I always put a good bit of soy sauce in it too.
cook for 8 hours
If you had a bone in roast, remove the bone. let cool for a half hour and pull apart, you can cut it into chunks to help it cool. Drain broth. once its shredded, return to crock pot. I only like mine slightly smothered in bbq sauce, Daniel likes his SWIMMING, so use your fave to taste. Let it cook for a half hour on high. all done! serve on buns with corn and salad.
you can do pot roast, and beef or turkey stew in there too. Tons of chili recipes online also. Baked beans with ham.

Not the healthiest one here, but...
One rump roast, 1 packet onion soup mix.
Trim the roast of any obvious fat, then plop it into the slow cooker...no water. Pour the onion soup mix on top. Cook all day on low.
Hummus
1 bag dried chickpeas, olive oil, salt, pepper, oregano, parsley, any other seasonings that you like.
Soak the chickpeas overnight. Pour out water; rinse. Cover with fresh water. Cook all day on low. At the end of the day, turn off slow cooker. Place drained chickpeas in blender with the rest of the ingredients...blend on high. No exact science here...add a little oil, seasonings, blend, taste, repeat if you find it necessary. Should be dip consistensy. Hummus makes a great lunch...spread it inside pita bread, or send a little cup of it as dip with triscuits and raw veggies. This makes a huge batch; keep it in the fridge and use it for healthy snacks and lunches.
Meatballs and spaghetti.
1 lb lean ground beef, or ground turkey
1 cup bread crumbs (I use whole grain high-fiber bread; place 2-3 slices in the oven on low setting for several hours, crumble.)
1 egg
1/4 c milk
salt and pepper
1 teaspoon soy sauce
spaghetti sauce
spaghetti noodles (whole grain is best)
Mix first 7 ingredients together in a bowl; shape into meatballs. Place meatballs in slowcooker, cover with spaghetti sauce. Cook on low all day, at least 6 hours. (Or you can cook it on high for 4 hours.)
Serve meatballs and sauce over cooked spaghetti noodles. (Or make meatball subs!)

There are cheaper pork roasts you can use too, that work. I prefer shoulder blade because it makes the juiciest meat.

I'm betting the combo of the sauce and fat from the balls keeps it from burning...

My favorite crock pot recipe is one that I just created.
I will get a Boston Butt (Pork or Beef) & throw the meat in there-season with Adobo seasoning & let it cook for 8-10 hours.
The first night we will normally make pulled meat tacos with fresh pico, limes, avacodo & heated flour tortiallas.
The next night we make BBQ sandwiches.

*Edit* This soup makes a HUGE batch and literally costs less than 5 bucks to make.
My father always made this AWESOME soup in the crock pot when I was little. It is so good in the winter or on rainy days.
Brown one lb hamberburger in a large skillet, when it's close to being done add a large can of diced tomatoes and let simmer for a little while. Keep the empty can. In your large crock pot add a small bag of frozen corn and sliced raw potatoes. I like a lot of potatoes but the amount doesn't matter too much. Then add two small cans of tomato paste. Use the empty diced tomato can to add two cans full of water to the crock pot and mix all this up a little. Then liberally add Lawry's Seasoning salt (my parents claim is HAS to be Lawry's lol.). Add the browned hamburger and diced tomatos and cook on high for a few hours in the crock pot. When the potatoes are done it is done but the longer it simmers the better it tastes. And also they usually keep adding tons of seasoning salt because the potatoes seem to soak it up. This soup is really good with corn bread or biscuits!
Also the leftovers are AMAZING. It's one of those things where the next day it tastes even better.
