Something yummy I made tonight

Top round steak aka london broil
1 can cream of mushroom soup
1 onion diced
I can beef broth
Or instead of onion and beef broth, you can use a can of French onion soup
I can water or milk

Trim the fat off the meat, season the meat to taste
I use garlic salt and pepper
Cube it or cut into strips

In a pan sauté the onion real quick, I sauté it in a little red wine vinegar but a small amount of butter or oil will work just fine. I also put the fat in with the onion. After the are slightly brown. I remove the fat.

Then add the meat just to sear and brown it
Add the rest of the ingredients to the pan and simmer for 1 hour and a half
Or you can cook it in the slow cooker for 3-4 hours

If you would like the gravy thicker add a little flour. I eyeball it but it's about 2 tbl

Serve with mash potatoes or rice and a veggie

I am making this tonight  

Three cheese stuffed jumbo pasta shells

12 oz package of Jumbo Shell Pasta
1 jar spaghetti sauce
15 oz container of Ricotta Cheese
2 eggs, beaten
1/2 tbs dried parsley
1/2 c grated Parmesen cheese
2 c shredded Mozzerella cheese

Preheat oven to 350 degrees. Boil the shells in a large pot for 14-15 minutes or according to package directions. While shells are boiling.. Grab a large bowl and beat the 2 eggs. Then add the Ricotta, Parmesen and Mozzerella cheese and parsley.. Stir until well combined. When shells are done, drain and then start stuffing shells. In a 9x13 glass baking dish pour atleast 1/2 a cup of sauce in the bottom and place stuffed shells in a row.. you should be able to get 3 rows and may not use all of the shells. Cover with foil and bake for 30 minutes or until hot and bubbly!

Baked Lemon Curry Chicken



Ingredients:

Servings:
4

Sauce may be doubled


1/2 cup sugar
4 tablespoons lemon juice
1 1/2 teaspoons curry powder
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon paprika
1/2 teaspoon garlic powder
1 egg, beaten
1 cup corn flake crumbs
1 chicken (cut up) or 1 assorted chicken piece, your choice
Directions:

Put first 7 ingredients in small covered container.

Let sit overnight, at room temperature.

Dip chicken pieces in egg.

Next dip in cornflake crumbs.

Place skin side down on a piece of tinfoil on pan. (easier for cleaning pan)

Bake 400 degrees for 1/2 hour - turn and BASTE with sauce for another 1/2 hour or until chicken is tender.

Stuffed Chicken Breast with Mashed Cauliflower
Preparation-Oven; Tools-Cookie Sheet/Meat mallet; Time-25 min

INGREDIENTS
· 5 ounce Chicken Breast
· ½ ounce Fresh, raw Spinach Leaves
· 1 ounce Roasted Red Pepper (see recipe)
· 2 Tsp DWL seasoning
· PAM Spray
· 1 ½ ounce Mashed Cauliflower (See Recipe)

DIRECTIONS
· Preheat oven to 400*
· Place Chicken breast in between two pieces of plastic wrap. Pound with a meat mallet to a uniform 1/8 inch thickness. Remove the top piece of plastic.
· Season chicken breast evenly with 1 Tsp DWL seasoning.
· Lay spinach leaves over lower half of chicken breast and put the roasted red pepper on top the spinach.
· Roll the Chicken up like a cigar and spray with PAM. Season with the remaining DWL seasoning.
· Roast in oven for 18-20 minutes on a cookie sheet.
· Slice into rounds and serve slices with Cauliflower.

Another healthy recipe
Shrimp Stir Fry
Preparation- Stovetop; Tools- Wok or Skillet; Time- 10 Min

INGREDIENTS:
· 5 Ounce Shrimp
· 1 Ounce Button Mushroom
· 1 Ounce Zucchini, diced ¼ Inch
· ½ Ounce Red Pepper, cut into strips
· ½ Ounce Spinach Leaves
· 2 Spray PAM Nonstick Spray
· 1 Ounce Water

DIRECTIONS:
· Heat Wok over high flame
· Spray shrimp with 1 spray of PAM and season with 1 tsp DWL Seasoning
· Put Mushrooms, zucchini and red peppers on a separate plate. Spray with remaining PAM spray and season with 1 tsp DWL Seasoning.
· Place shrimp into hot wok and sear for 2 minutes. Add seasoned vegetables and stir fry for 2 minutes.
· Add water and spinach leaves and bring to a boil for 30 seconds.
· Plate in a bowl and serve hot.
