I've always been fond of fried rice and think it as the quintessential comfort food. Only a bowl of steaming white rice cooked to just the right consistency, filled with bits of meat and vegetable, makes your stomach full and mouth tasty. No wonder fried rice is one of the world's most popular rice dishes.

Peanut Butter Pie


1 pkg vanilla pudding
1 cup milk
1 pkg cream cheese
1 cup peanut butter
1 cup powdered sugar
1 small tub of whipped cream

Mix milk and cream cheese. Add pudding powder, set aside.

Mix peanut butter and powdered sugar until crumbly. (Soften PB in microwave for 30 seconds.) Spread half of PB mixture in pan for crust. Save 2 tbsp of PB mixture. Add rest of PB mixture to cream cheese mix. Blend. Pour onto crust. Top with whipped cream. Sprinkle 2 tbsp PB mixture on top.

I was looking for some recipes online for gingerbread houses and I found this.. I'm gonna try it, I heard it's an excellent recipe. If anyone else tries it let me know how it turns out.


Royal Icing II
The ‘glue’ that holds gingerbread houses together and makes them still edible

Ingredients
3 tablespoons meringue powder
4 cups sifted confectioners' sugar
6 tablespoons water
Directions
Beat all ingredients at low speed for 7 to 10 minutes, or until icing forms peaks. Tip: Keep icing covered with a wet kitchen towel at all times. Icing can dry out quickly.

Also this a recipe from my grandmother that I tried the other night. It's extremely easy and it tastes heavenly... I have to make some more asap.

Peach Cobbler
1 cup sugar
3/4 cup flour
3/4 cup milk
1/4 cup water
1 stick margarine
1 can peaches

Melt butter in baking dish in 300 degree oven (can be melting while preheating). Make batter of flour, sugar, water, and milk. Pour over butter, don't stir. Add peaches, not quite all of the juice, and DO NOT STIR. Bake for one hour. Let cool off and eat with vanilla ice cream on top if desired...

Just wanted to share this family recipe for chicken n dumplings. I don't have an actual recipe. I just make them the way I was taught.

What you will need
1 Whole Chicken
2 or 3 Celery stalks
2 or 3 Bay leaves
1 or 2 cans of chicken broth
Flour, milk, oil (for the dumplings)
Salt and pepper to taste


1. Boil the chicken whole for approx 1-1.5 hours. Pull out of the pot and set aside to cool slightly, just enough so you can handle it. Leave the liquid from boiling the chicken in the pot!! This is your broth!

2. Pull all the meat off the chicken and shred it, put it back in the pot. Dice your celery and throw that in there as well. Add 1 or 2 cans of broth, depending on how much liquid you have in the pot already. Throw in the bay leaves.

3. Make biscuit dough. You can also do this while the chicken is boiling to save time. I use Marth White's Hot Rize biscuit recipe because it is super simple! http://www.marthawhite.com/Recipes/Detail.aspx?RecipeID=2476
Instead of rolling the dough out like you are making biscuits just make a big ball and pull off chunks that are about 1/2 inch big and roll those into balls. Make sure the pot is at a rolling boil before throwing the dumplings in or they will all stick together. Throw them in a few at a time. The liquid will thicken from the flour in the dumplings. Let cook at least 45 minutes, or longer if you prefer.

Hope that makes sense! It sounds difficult but they are SO easy and delicious! I serve them with a nice green side like buttery garlic spinach and cornbread. I also vary it a little and make chicken noodle soup by adding onions, carrots, garlic, thyme and egg noodles.

Chicken Cordon Bleu Crescent Rolls

- Pillsbury crescent rolls
- swiss cheese
- can of chicken
- sliced ham

Dice up swiss cheese and ham. Add canned chicken. Roll out the crescent rolls and add filling. Roll up and bake as directed.



 



I made these a few weeks ago. I LOVE Chicken Cordon Bleu so why not?
